After some disappointing news today I turned to food (as usual) for emotional comforting.

Simple breakfast that makes things a little better.

Blue Mountain Coffee with THREE sugars (turbinado).
Runny eggs & chicken stuffing.

I absolutely LOVE good chicken stuffing, and is evident that I could eat it all the freaking time.

Extra sharp cheddar.
British chip shop style curry sauce (gravy).
Lightly roasted garlic cloves.

Makes for a simple yet delicious little appetizer plate.

Mahhhhn-dae noight deeeeh-naarrr. 

Baked potato:
Scrubbed clean. Pierced & rolled in olive oil then seasoned with coarse sea salt & fresh ground pepper. 
Baked naked (sans foil) for 1 hour at 350, giving it a superbly crisp & crunchy skin. 
Smothered with EXTRA-SUPER SHARP TILAMOOK CHEDDAR (the type of cheese that rearranges the teeth in your mouth). The whole potato ensemble is then topped with extra crispy (burnt) caramelized onions, shallots & garlic. 

Heinz Baked Beans. Unadulterated & topped with a little Jack cheese. 

Tombo-Ahi medley. 
My own creation of high quality solid white long-fin tuna (canned Albacore works), chunked & tossed with diced sweet onion, green & red pepper, a dash of olive oil, cilantro & a secret mix of spices & seasonings.

BOOM. I just had an Omnomgasm.

Salmon Crunch Rounds: pink salmon (canned) mixed with sautéed portobello mushrooms, red onion, an egg (to bind) and plenty of Panko breadcrumbs to give a super CRUNCHY texture. 

Potato & Veg Pancakes: used instant potato mix, some mixed vegetables & various seasonings. 

Served with Baby Greens & my own homemade Peri-Peri sauce.

Toped with my fresh compote of strawberries & raspberries with while chunks of strawberries mixed in. 

A fantastic & very healthy dessert option.
